From Santa Rita Los Naranjos one of a group of farms owned and run by the Salvaria family, it is the careful picking and sorting or only the ripest fruit, along with innovative processing methods that make their El Salvadorian coffees so clean and distinct.

Lots are separated by altitude and by farm, pulped and soaked overnight to produce a brighter, cleaner cup and then dried on raised beds for up to 15 days.

El Salvador – El Vertiente

El Vertiente, is a tablon (block) inside the greater Santa Rita Los Naranjos farm. This coffees are grown at about 1600 MASL which is a really high altitude for Salvador.

The cultivars grown are a mix of Bourbon, Pacas and Hibrido de San Francisco (a local hybrid of the dwarf bourbon Pacas and old Bourbon Elite).

Part of the farm has recently been renewed and replanted and the producer is innovative in many ways of processing and farming. The beans are separated by the day of picking and a variety of different processing, fermentation and drying techniques are employed depending on the capacity and potential of each lot.

In this case the beans were de-pulped before being fermented under water for one night. The coffee was then rinsed in clean water and soaked in water again for about 10 hours before being carefully dried on a concrete patio.
