A lovely organic micro-lot coffee. Grown by Don Walter Jolman Lara and his son Oliverio on their 2 hectare farm in Honduras, it’s the smooth top notes and nutty chocolate finish that we love.

Honduras – Jolman Walter Organic

This micro-lot coffee is grown by Don Jolman Walter Lara on his farm, Finca Bella Vista 2 which lies in Corquin, Copan where he has been a coffee producer for 51 years. The farm is situated at 1300 masl and its 2 hectares are planted with red catuai. The environment here is perfect for growing specialty coffee. On the farm he one of his sons, Oliverio Lara López, helps with the day to day tasks and Don Jolman also receives help from the techincians at the Aruco cooperative on details of farm management. As well as this he receives financial support during the year from Aruco to help maintain the farm. Don Jolman is also very active in the local community, he is Municipal Director of Education in Corquín Copán where his aim is to create a better future for the next generation.

This year the harvest for all producers was extremely difficult with increased rains during the harvest and a lack of pickers, meaning that a large amount of coffee was lost from either falling to the ground or swelling and splitting on the tree. All the processing for the micro-lot takes place at the Aruco mill which enables the cooperative to create consistent procedures and also to reduce the risk for the producer. The mill is located at 800masl which also gives a
drier more stable climate for drying the coffee compared to up at the farm where the weather is less predictable. The coffee is delivered to the mill where the cherry is assessed and the processing style decided upon. This is a washed coffee which means that the cherry is removed, then the beans are washed and floated to remove any immature ones. The coffee is then taken to the beds where it is dried for between 20 -30 days (weather depending) during which time it is turned hourly.
